Good/healthy lunches

I don't eat very unhealthily, but I could improve a few things. I generally don't eat bread for lunch when I'm at uni...actually eating across the day is something that's hard once you've had breakfast and left the house.

Current lunch always involves some fruit, maybe a salad type thing/pasta and maybe crisps/chocolate.  :frying pan: Any healthy lunch suggestions whilst not adding weight/salt?

I use those packets of flavoured cous cous.  I cook it & let it cool, then add chopped tomatoes, spring onions, cucumber, radishes, olives, capers... etc  I add a couple of Quorn sausages cooked & chopped up small & stir it all together.  This does at least 2 lunches & is very low fat.  Once I have eaten a serving of that, I can't manage crisps / chocolate etc.

Other nice things are crispbreads with cottage cheese, rice salads, fruit salad is always good if you need something sweet to finish!
